Low-Calorie Creamy Broccoli Soup

Ingredients

  • 500 g broccoli, washed and cut into small florets
  • 1 onion, finely chopped
  • 2 tbsp butter
  • 2 - 3 tbsp ground wholegrain oat flour
  • 1 litre low sodium vegetable broth
  • 1 pinch salt
  • Freshly ground white pepper
  • Freshly grated ginger
  • Freshly grated nutmeg
  • 1 pinch ground cayenne pepper
  • 3 tbsp crème fraiche
  • 20 g flaked almonds

Allergens: contains nuts, milk, oats (gluten). 

Method

  1. Wash and cut the broccoli into small florets, then set aside. 

  2. Peel and finely chop the onion.     

  3. In a medium saucepan, melt the butter over medium heat. Then add the onion and broccoli florets and cook 2-3 minutes or until the onions begin to soften.  

  4. Sprinkle in the wholegrain oat flour, then pour in the vegetable broth. 

  5. Simmer the soup over a moderate heat for about 10 minutes, then stir in the ginger, cayenne pepper, and nutmeg. Season with salt and pepper to taste.     

  6. Purée the soup with a hand blender and warm through 

  7. Add the crème fraiche and divide among 4 bowls 

  8. Optional: garnish the soup with toasted almond flakes and florets of cooked broccoli.
