The Best Cabbage Soup Recipe

You can’t go wrong with a classic cabbage soup. It is loaded with vegetables such as cabbage, celery, and courgette and it makes a delicious lunch or dinner.

Put your apron on and try making this hearty soup at home!

Ingredients

  • ½ onion, peeled and chopped
  • 1 tbsp olive oil
  • 1 garlic clove, peeled and crushed
  • 2 tomatoes, peeled and diced
  • 250 g courgette, grated
  • 500 g cabbage shredded
  • 60 g celery, diced
  • 750 ml vegetable stock
  • 2 tbsp fresh basil, finely chopped
  • 2 tbsp fresh coriander, freshly chopped

Method

  1. Heat the olive oil in a medium-sized non-stick saucepan over medium-high heat. Add the onion and garlic and sauté for about 5 minutes, or until the onion is soft and translucent.

  2. Once the onions are soft, add the rest of the chopped vegetables and cook for another 3-5 minutes.

  3. Finally, add in the vegetable stock and fresh herbs and lower the heat, then allow to simmer until the vegetables have softened. This will take approximately half an hour.

  4. Serve in a bowl, and enjoy!
